    Lamb Smash Burgers with Mint Sauce


    These lamb smash burgers are fast, juicy, and ridiculously easy to make. Fatty lamb mince, a hot flat top, and a simple homemade mint sauce are all you need. From prep to plate, this is a high-heat, low-stress burger that delivers big flavour with minimal effort.

    Choosing the Lamb:
    Smash burgers rely on fat for flavour and texture. When it comes to lamb, lean mince just won’t cut it. Ask your butcher for fatty lamb mince so the burgers stay juicy and hold together when smashed. If you can, get it freshly minced.


    Burger Size:
    Each patty starts as a 100g (3.5 oz) ball. This is the sweet spot for smash burgers — thin enough to get a crust, but still juicy once stacked.


    Equipment Needed:
    You don’t need anything fancy, but a few things make life easier:
    •    A flat top grill or hot plate (gas, charcoal, or cast iron all work)
    •    A burger smasher or sturdy spatula
    •    Baking paper, which stops sticking and makes clean-up easier
    •    A large spatula for flipping (gender-neutral, obviously)


    Sauce & Seasoning:
    Mint sauce and lamb are a classic combo for a reason. The yoghurt-based mint sauce adds freshness, while rosemary salt brings that savoury, herby punch that works perfectly with lamb.


    Preparation:
    Start with the mint sauce so it has time to chill and thicken. Combine yoghurt, chopped mint, garlic, lemon juice, salt, and pepper, then whisk until smooth. Pop it in the fridge for about an hour — don’t stress, plenty happens while that’s resting.
    Next, portion the lamb mince into 100g balls. No need to overwork the meat; just roll them lightly and set aside.


    Prep the rest of your ingredients:
    •    Finely dice the onion
    •    Slice the cheese
    •    Melt some butter for the buns


    That’s it. Prep done.

    The Cook:
    Fire up your flat top grill and let it heat for 10 minutes. You want it properly hot — if you wouldn’t lick it, it’s ready.


    Butter the cut sides of your brioche buns and set them aside.


    Add a little oil or butter to the hot plate, then place the lamb balls down. You should hear an aggressive sizzle straight away.


    Season with rosemary salt and smash the patties down firmly using baking paper to stop sticking. Let them cook for 1–2 minutes until a crust forms. When you see juices pooling on top, flip them.


    Add cheese immediately after flipping and cook for another 1–2 minutes. Toast the buns cut-side down on the flat top until golden.

    The Payoff:
    Remove the buns and start building:
    •    Mint sauce on the bottom bun
    •    Double stack of lamb and melted cheese
    •    Extra mint sauce
    •    Finely diced onion


    Top with the bun, give it a gentle press, and get stuck in. These burgers are best eaten immediately while everything’s hot and juicy.

    •    1 cup plain yoghurt (240 ml)
    •    ½ cup fresh mint leaves, finely chopped
    •    2 cloves garlic, minced
    •    1 tablespoon fresh lemon juice
    •    Salt and pepper, to taste
    Rosemary Salt
    •    7 sprigs rosemary
    •    4 sprigs sage
    •    ½ cup plus 2 tablespoons kosher salt
    •    2 cloves garlic
    •    Zest of ½ lemon

    Recipe Steps:
    1    Mix all mint sauce ingredients in a bowl. Refrigerate for 1 hour.
    2    Blend all rosemary salt ingredients in a food processor for 30 seconds.
    3    Portion lamb mince into 100g (3.5 oz) balls.
    4    Preheat flat top grill on high heat for 10 minutes.
    5    Butter burger buns and set aside.
    6    Lightly oil the hot plate and place lamb balls down.
    7    Season with rosemary salt and smash firmly.
    8    Cook for 1–2 minutes until a crust forms.
    9    Flip patties, add cheese, and cook another 1–2 minutes.
    10    Toast buns cut-side down until golden.
    11    Assemble burgers with mint sauce, double patties, onion, and top bun.
    12    Serve immediately.
