    Aussie BBQ Twinkies (bacon Wrapped Dim Sims)

    Aussie BBQ Twinkies are the ultimate backyard snack – bacon wrapped dim sims cooked hot and fast on the BBQ, then glazed in a sticky, sweet sauce. They’re quick, easy, and perfect for indirect grilling when you want big flavour without a long cook.

    What are Aussie BBQ Twinkies?
    Inspired by Texas Twinkies (bacon wrapped stuffed jalapeños), this is the Australian shortcut version. Instead of stuffing and fiddling around, we start with a frozen dim sim and let the bacon, rub, and BBQ do the heavy lifting.

    Choosing Your Ingredients:
    •    Dim sims: Marathon brand dim sims work perfectly. They’re consistent in size and can be cooked straight from frozen.
    •    Bacon: Look for streaky bacon with a uniform shape. This makes wrapping easier and helps everything cook evenly.
    •    BBQ rub: Any savoury BBQ rub will work. Beef-style rubs are ideal because they pair well with bacon.

    Equipment Needed:
    •    57cm (22") Weber kettle BBQ
    •    Kettle Kone (Vortex-style insert)
    •    Chimney starter
    •    Instant-read thermometer
    •    Silicone basting brush
    Indirect high heat is the key here. The kettle kone forces hot air up and around the food, giving you crisp bacon without burning.

    Preparation:
    Start by setting up your BBQ first so it’s hot and ready when the food goes on.
    Lay two slices of bacon in a cross pattern. Place a frozen dim sim in the centre, fold one slice over the ends, then wrap the second slice around to secure it. Repeat with the remaining dim sims.

    Arrange the bacon wrapped dim sims on a tray and season generously with BBQ rub from about 30 cm (12 inches) above. This helps the rub spread evenly and avoids clumping.

    The Cook:
    Set your Weber kettle up for indirect grilling using a kettle kone. Fill a chimney starter about three-quarters full with briquettes and light them. Once fully ashed over, place the kettle kone in the centre of the charcoal grate and pour the hot coals into it.

    Open all vents and allow the BBQ to preheat for around 10 minutes. You’re aiming for a cooking temperature of about 240°C (464°F).

    Place the dim sims around the outer edge of the grill, away from direct heat. Put the lid on and cook for around 20 minutes.

    Every 10 minutes, rotate the lid about a third of the way. The lid vent creates a hotspot, and spinning the lid helps everything cook evenly.

    While they cook, warm your BBQ sauce and honey together in a small pot over low heat. You’re just warming it, not boiling it.

    After 20 minutes, brush the dim sims generously with the sauce glaze. Get the lid back on and cook for a final 10 minutes.

    The Payoff:
    After about 30 minutes total, the bacon should be cooked and sticky, and the dim sims piping hot.

    Remove them from the BBQ carefully – they’re molten inside. Let them rest for a couple of minutes before serving.

    The internal temperature should reach at least 74°C (165°F) to ensure the minced filling is safe to eat.

    Serve hot with friends, cold drinks, and zero regrets.

    7    Warm BBQ sauce and honey together over low heat.
    8    Glaze the dim sims evenly with sauce.
    9    Cook for a further 10 minutes.
    10    Remove, rest briefly, and serve hot.

    Tips & Variations:
    •    Sauce timing matters: Glaze only at the end. BBQ sauces are high in sugar and will burn if added too early.

    •    No kettle kone? You can still cook these indirectly by banking coals to one side, but airflow and crispness won’t be quite the same.
    •    Crowd cooking: Make extra – these disappear fast and people will come back for seconds.
